SIBERIAN OSETRA — This hardy
breed of sturgeon has thrived far from home on two continents to
offer caviar afficionados a subtle, yet distinct choice of flavor.
Its German purveyors deliver a creamy, nutty pop found in a medium
size egg with a deep brown hue — while a jet black egg from
Uruguay offers the same smooth entré, but with a mild, fresh
finish. Each sustainable. Both irresistible.
APPLICATIONS —
With similar characteristics as Osetra, the Siberian Sturgeon
is nutty, yet briny. Try it with fresh oysters or smoked
sturgeon for a classic combination.

the wild, this species is
found throughout Siberia and it's many rivers including the
Ob, Irtysh,
Indirka, and
Lena.
Aquafarmed in Germany and Uruguay, this sturgeon matures
within 7 years, averaging 5 feet in length and 110 pounds
in weight.
