APPLICATIONS — Salmon roe has the biggest flavor and pop of all the roes and can be used in place or in conjunction to salmon meat. Topped on cornmeal pancakes with herbed crème fraiche or tossed in a mache salad with avocado are some of our favorite applications.

SPECIESamerican salmonOncorhynchus Keta. Commonly known as 'chum salmon', habitation is throughout the Pacific Ocean and along the west coast of North America spawning in rivers from Canada to Monterey, California. Fully mature in 3 to 5 years, average length 2 to 3 feet, weighing 8 to 15 pounds.
