IRANIAN OSETRA — A pearl of Persia,
the large bead of this caviar ranges from dark brown to a brilliant
amber color. With a pronounced nutty pop, this osetra is refined
with a full sea flavor.
APPLICATIONS —
An absolute favorite of connoisseurs, this caviar is complex,
briny and smooth with a beautiful appearance. We think
its perfect simply with warm blini and a cold glass of
blanc de blanc.
SPECIES —
Acipenser Persicus. Found
primarily in the Southern Caspian Sea, but known to habitate
throughout,
this sturgeon reaches maturity in 9 to 12 years, averaging
4.5 to 6 feet in length, weighing between 52 and 75 pounds.
