
HACKLEBACK STURGEON — Known also
as ‘shovelnose’ sturgeon, this popular wild American
caviar hails from the estuaries of the Mississippi-Missouri river
systems. Its small jet black egg and light, nutty finish compare
favorably to international counterparts.
APPLICATIONS —
Great for large parties as hackleback can be used as a substitute
for the pricier osetras. Its versatility and nutty character
lends itself well to egg dishes, paired with creamy cheeses,
or with full flavored fish such as salmon and tuna.

Platorhynchus. Commonly
known as 'shovelnose', hackleback
is found throughout portions of Mississippi and Missouri river
basins.
Prefers shoals and congregate in pools. Reaches maturity
in 5 to 7 years, averaging a little under 3 feet in length
and weighing about 12 pounds.
