a private label caviar line with practical and nutritious applications
for the home chef.
Choosing the finest
California white sturgeon and hackleback
caviar, trout and whitefish
roes, Caviar Claudine integrates these caviars into exciting and
nutritious recipes for the whole family to enjoy. Applying
simple tastes and pure flavors from sustainable sources,
these domestic
caviars will become new family favorites.
APPLICATIONS —
Whitefish: One
of Claudine’s family favorites is orecchiette
pasta tossed with butter, chives and whitefish caviar in which
she’s named “eggs and ears”.
Trout: Claudine
likes to serve dishes with pure clean flavors, such as tea
sandwiches made with thinly sliced cucumber, a
thin layer of cream cheese and trout caviar.
Hackleback: For
a quick and easy appetizer that will still impress, toast
a premade thin pizza crust, spread on crème
fraiche and top with smoked salmon, chives and hackleback.
Cut into wedges and serve.
White Sturgeon: A favorite of
the Pepin family is starting the day off with hot buttered
crepes stuffed with Osetra
caviar…Simplicity
at its finest.
SPECIES —
White Sturgeon (Acipenser
Transmontanous) is sustainably
farmed in California at a closed-circulation facility similar
to most
aquafarms removed from natural water supplies. In captivity
the "white sturgeon" is fully mature in 7 to 9 years,
weighing on average 80 lbs. and 5 to 6 feet in length... Hackleback
Sturgeon (Scaphirhynchus
Platorhynchus) is
found in portions of Mississippi and Missouri river
basins, and eaches maturity
in 5 to 7 years, averaging a little under 3 feet in length
and weighing about 12 pounds... Whitefish
Roe (Coregonus
Clupeaformis) inhabits the fresh
waters of Canada and United States, specifically
the Great Lakes, reaching maturity
in 2 to 3 years and averaging 1.5 to 4 feet in length, and
weighing from 17 to 22 pounds.
