Our correct caviar, named Vivace, is the first cruelty-free caviar available in the US. The eggs are extracted from the sturgeon using a harmless massaging technique then are delicately rinsed using the Kohler Process, which maintains their natural state. The result is caviar that is larger, more uniform in size, with an accentuated pop and a shelf life more than double that of conventional caviar. Vivace caviar is extremely versatile in many applications and can withstand warm temperatures, making it a great accompaniment to many dishes. It can be also be enjoyed in the classic presentation, with blini (or potato chips) and crème fraîche, or simply spooned on its own.



PRIMO — Primo offers a clean, subtle flavor with a light brine and full pop. The Primo can be served on its own or with a variety of accompaniments.

Russian Osetra Caviar

Russian Osetra Caviar imported from Bulgaria

Our sustainably farmed imported Russian Osetra caviar is best served simply — on a soft blini, lightly toasted brioche or straight on a pearl spoon along side a cold glass of brut champagne. This farmed version of the legendary caviar is a must to experience. It has all of the distinctions of its wild counterpart without any of the guilt, a full pop, eggs ranging from dark brown to golden blond and a pronounced oceanic flavor.

SPECIESAcipenser Gueldenstaedtii. Inhabits the Caspian Sea, Black Sea and Sea of Azov. Matures 8-16 years, 7-8 feet in length, and 140-250lbs. Farmed in Bulgaria and Israel.



GOLDEN FARMED RUSSIAN OSETRA (Israel) — With a slightly larger ranging from dark brown to golden blond, this caviar has a more pronounced brine yet a clean flavor.

Siberian Sturgeon

Our imported Siberian Sturgeon is hardy breed of sturgeon that has thrived far from home in Uruguay and offers caviar afficionados a jet black egg with a smooth entré and a mild, fresh finish. Try it with fresh oysters or smoked sturgeon for a classic combination.

SPECIESAcipenser Baerii. Found throughout Siberia’s rivers including the Ob-Irtysh, Yenisey, Indirka, and Lena. Matures 10-18 years, 6-7 feet in length, and 140lbs. Farmed in Florida and Uruguay.

SIBERIAN STURGEON (Uruguay) — For caviar afficionados this caviar is a nice addition to the family, providing a subtle, yet distinct choice of flavor, medium sized eggs with a deep gray hue, a smooth pop and sweet finish.

What are my shipping options?

Shipping Options

Caviar is a perishable item. To ensure you receive your caviar with the highest quality, we only ship overnight with a flat rate of $30 per order. If your order does not include a perishable item, you can choose from Overnight, 2nd Day Air, and Ground shipping. For complete ordering, shipping and returns information, click here.

When will my order arrive?

We ask that you please allow 48 business hours for processing your order. Should you need to have your order expedited (24 business hours processing), an additional charge of $15 will be added to your order. For example, orders received before 5pm on Monday would ship Wednesday for a Thursday delivery. read more See complete shipping schedules here.

What about storage and serving?

The ideal temperature for storing caviar is 28° - 34° to preserve optimal quality. This is best achieved by keeping it on ice in your refrigerator. Unopened, caviar will last 4 to 6 weeks. Once opened, enjoy your caviar within 5 days. Serve caviar on a bed of shaved ice either in its own tin or in a glass or Mother of Pearl server. read more Get more serving tips here.
