
Smoked Sturgeon
Salad with Apple Slaw & Caviar
Vinaigrette

Slaw: |
| 1 |
Apple,
peeled, seeded & thinly sliced |
| 1/4 |
Cup celery
thinly sliced |

Tablespoons
crème fraiche |
| 2 |
Tablespoon
flat leaf parsley, chopped |
| 1/2 |
Teaspoon
fresh thyme chopped |
Whisk together crème fraiche, parsley & thyme
and toss with apple and celery. Season with salt and fresh
ground black pepper to taste.

Vinaigrette: |

Ounce
Whitefish Caviar |
| 4 |
Tablespoons
canola or grape seed oil |
| 2 |
Tablespoons
champagne vinegar |
| 2 |
Teaspoon
Dijon mustard |
| 1 |
Teaspoon
truffle oil |

Whisk together oils, vinegar & mustard
and fold in the caviar. Season with salt and fresh ground
black pepper
to taste.
Toss butter lettuce with enough vinaigrette
to your liking, making sure to scoop up the caviar that
may
settle to the
bottom.
Arrange slaw on a bed of lettuce and
top with smoked sturgeon. Drizzle remaining vinaigrette
over the
sturgeon.
