Salmon Tartare with Sake Infused Trout Caviar
Serves 4

Salmon Tartare with Sake Infused Trout Caviar

ingredients
16 Ounces fresh wild salmon
1.5 Tablespoons ponzu
3 Tablespoons blood orange or lemon olive oil
1 Teaspoon lemon zest
1 Tablespoon chives, minced
1 Cups micro greens
2 Ounces Sake Trout Caviar
   

Slice salmon into 1/4" cubes. Combine ponzu, olive oil, lemon zest and chives and stir into salmon. Season to taste with salt and pepper. Divide micro greens onto 4 plates and top with tartare. Spoon caviar over tartare and serve.
