Sweet Potatoes & Bourbon Infused Trout Roe Two Ways

Bourbon Maple Roasted Sweet Potatoes with Bourbon Infused Trout Roe
Serves 4

ingredients
1 large sweet potato or yam, peeled and cut into 1 inch pieces
1/4 cup butter
1/4 cup maple syrup
1 tablespoon bourbon
  salt
2 ounces California Caviar Company Bourbon Infused Trout Roe

Lay sweet potatoes in a single layer of a cookie sheet or baking dish. Melt butter in a saucepan and add maple syrup and bourbon, bring to a boil and pour it over sweet potatoes.

Season with salt and pepper and stir to coat all pieces. Bake in a 375 degree oven for minutes, until browned and caramelized. Transfer sweet potatoes to a serving dish and spoon over bourbon trout roe.



Salt Baked Sweet Potatoes w/Bourbon Maple Butter & Bourbon Infused Trout Roe
Serves 4

ingredients
1 large sweet potato
1 box ice cream salt
1/4 cup unsalted butter at room temperature
1 teaspoon red onion, minced
1 tablespoon bourbon
1 tablespoon maple syrup
1 teaspoon chives, minced
  salt and pepper
2 ounces California Caviar Company Bourbon Infused Trout Roe

Put whole, unpeeled sweet potato in a loaf pan and cover with rock salt. Bake at 375 for 1 hour until potato is soft when inserted with a knife. Remove potato from salt, brushing off any excess salt that sticks. Slice into 1/2” discs.

Top each disc with a spread of butter then a teaspoon of bourbon infused trout roe. Saute onions until soft, 2-3 minutes, add bourbon and maple syrup and continue to cook until onions have absorbed the liquid. Let cool and stir into butter.
