White Truffles | Tuber Magnatum
Coming from the Piedmont region in the countryside around the city of Alba in northern Italy, these highly esteemed truffles are harvested in the Fall and found growing under oak, hazel, poplar and beech trees.
The most aromatic of the truffle varieties, white truffles are almost never cooked. Simply slice them over your dish to release their intense aroma. These white truffles are imported directly from Italy, picked and delivered within a week of leaving the rich soil. Their flesh is pale cream or brown with white marbling and average ½ to 1 ½ ounce in size.
