Black Summer Truffles | Tuber Aestivum

With a subtle earthy flavor and texture, the summer truffle is less potent than the winter variety yet it lends itself well to light summer dishes. It is also less expensive making it an easy seasonal alternative to heighten a dish’s flavor and presentation.

Harvested May through September and grown under oak, hazel and beech trees. These summer truffles are imported directly from Italy and France, picked and delivered within a week of leaving the rich soil. This season has proved to be a specifically great one and in turn we’re seeing larger than average truffles, weighing 1 to 8 ounces. Summer truffles generally have a round and bumpy appearance with brown to black skin and tan flesh when ripe.

Coming from the Piedmont region in the countryside around the city of Alba in northern Italy, these highly esteemed truffles are harvested in the Fall and found growing under oak, hazel, poplar and beech trees.

The most aromatic of the truffle varieties, white truffles are almost never cooked. Simply slice them over your dish to release their intense aroma. These white truffles are imported directly from Italy, picked and delivered within a week of leaving the rich soil. Their flesh is pale cream or brown with white marbling and average ½ to 1 ½ ounce in size.
